The single biggest source of food waste in most kitchens is the bottom of the crisper drawer. A half-onion, a sad zucchini, the spinach you swore you'd use. These recipes are designed to absorb whatever's wilting. Frittata, stir-fry, hash, soup. The technique matters more than the specifics.
