What to Make With Eggs

Eggs are the most forgiving ingredient in a budget kitchen. A dozen costs less than a takeout coffee, they keep for weeks, and they turn almost anything in the fridge into dinner. The recipes below are the ones I actually rotate through when there's not much else in the house. A proper omelette when I want comfort, fried rice when there's a half-cup of last night's rice on the counter, a frittata when the crisper drawer needs clearing. None of them need fancy pans or technique. They just need eggs, a few minutes, and the willingness to skip the takeaway app.
