Fried Egg Rice Bowl
A bowl of rice topped with a fried egg, soy sauce, and whatever else makes you happy is the meal I make most often when I'm cooking just for myself. The yolk is the sauce. Crisp the egg edges in hot oil. Sloppy diner-style fried eggs are wrong here.

Ingredients
- ·1.5 cups, cooked and hot rice
- ·2 large eggs
- ·1 tbsp soy sauce
- ·2 tbsp cooking oil
- ·1, sliced green onion (optional)
- ·pinch chili flakes (optional)
Method
- 1.Pile the hot rice into a bowl. Drizzle with the soy sauce.
- 2.Heat the oil in a small skillet over medium-high until it shimmers. You want it actually hot.
- 3.Crack in the eggs. They should sizzle and bubble immediately. Don't move them for 90 seconds.
- 4.When the whites are set and the yolks still wobble, slide them onto the rice.
- 5.Top with green onion and chili flakes. Break the yolks with a chopstick and mix everything together.
