Fried Egg Rice Bowl

By Marie Lavigne

A bowl of rice topped with a fried egg, soy sauce, and whatever else makes you happy is the meal I make most often when I'm cooking just for myself. The yolk is the sauce. Crisp the egg edges in hot oil. Sloppy diner-style fried eggs are wrong here.

Ingredients

  • ·1.5 cups, cooked and hot rice
  • ·2 large eggs
  • ·1 tbsp soy sauce
  • ·2 tbsp cooking oil
  • ·1, sliced green onion (optional)
  • ·pinch chili flakes (optional)

Method

  1. 1.Pile the hot rice into a bowl. Drizzle with the soy sauce.
  2. 2.Heat the oil in a small skillet over medium-high until it shimmers. You want it actually hot.
  3. 3.Crack in the eggs. They should sizzle and bubble immediately. Don't move them for 90 seconds.
  4. 4.When the whites are set and the yolks still wobble, slide them onto the rice.
  5. 5.Top with green onion and chili flakes. Break the yolks with a chopstick and mix everything together.

If you don't have…

  • soy sauce: tamari, or a splash of fish sauce, or a swirl of sriracha
