Cheese Quesadilla

A quesadilla is just a grilled cheese with a passport. Two tortillas, a generous handful of cheese, a little onion if you have it, dry pan, low heat. The mistake people make is rushing it on high heat. The cheese needs time to actually melt before the tortilla burns. Patience is the only ingredient that doesn't appear on the list.

Ingredients

  • ·2 medium tortillas
  • ·60 g, grated cheddar cheese
  • ·2 tbsp, finely diced onion (optional)

Method

  1. 1.Heat a dry non-stick pan over medium-low.
  2. 2.Place one tortilla in the pan. Scatter the cheese evenly, leaving a 1 cm border. Sprinkle on the onion if using.
  3. 3.Top with the second tortilla and press down gently with a spatula.
  4. 4.Cook 3 minutes until the bottom is golden. Carefully flip. Slide it onto a plate, invert the pan over the plate, and flip back.
  5. 5.Cook 2-3 more minutes until the second side is golden and the cheese is fully molten. Cut into wedges.

If you don't have…

  • cheddar: any melting cheese. Monterey jack, mozzarella, even leftover string cheese chopped up
  • second tortilla: fold a larger tortilla in half
