Microwave Mug Mac & Cheese
I'm not going to pretend this is restaurant cooking. It's a five-minute snack you make in a mug at 11pm when you want something warm and starchy. But the technique is real (boil the pasta in the mug, drain, melt cheese with milk on top) and the result is genuinely good. Use a tall mug to avoid pasta-water volcanoes.

Ingredients
- ·60 g small shape. Macaroni, ditalini, mini shells pasta
- ·60 ml milk
- ·40 g, grated cheddar cheese
- ·180 ml water
- ·pinch salt
- ·to taste black pepper
Method
- 1.Put the pasta in a tall microwave-safe mug. Add the water and a pinch of salt.
- 2.Microwave on high for 3 minutes. Stir. Microwave another 2-3 minutes until the pasta is tender. Watch it. The water can foam over.
- 3.Drain off most (but not all) of the water. Keep about a tablespoon.
- 4.Stir in the milk and cheese. Microwave 30 seconds. Stir hard until everything emulsifies into a sauce.
- 5.Crack pepper over the top. Eat with a spoon directly from the mug.
