Cheesy Pasta Bake

By Marie Lavigne

Comfort food, the cheap and honest version. Pasta tossed with a quick tomato sauce, topped with cheese, baked until the top is bubbling and a little burnt at the edges. Make extra and reheat tomorrow. It's arguably better the second day.

Ingredients

  • ·300 g penne or fusilli pasta
  • ·1 × 400 g can canned tomatoes
  • ·150 g, grated cheddar cheese
  • ·3 cloves, minced garlic
  • ·1, diced onion
  • ·2 tbsp olive oil
  • ·to taste salt
  • ·to taste black pepper

Method

  1. 1.Heat the oven to 200 °C (400 °F). Bring a big pot of salted water to a boil.
  2. 2.Cook the pasta for 3 minutes UNDER package time. It'll finish in the oven.
  3. 3.Meanwhile, warm the oil in a saucepan. Cook the onion 6 minutes, add garlic for 30 seconds, then the tomatoes. Simmer 10 minutes. Season hard with salt and pepper.
  4. 4.Drain the pasta and toss with the sauce and half the cheese in a baking dish.
  5. 5.Top with the remaining cheese. Bake 15-18 minutes until the top is deeply golden and bubbling around the edges. Let it sit 5 minutes before serving.

If you don't have…

  • cheddar: any melting cheese. Mozzarella, gruyère, or a mix
  • oven: make it on the stove and finish with cheese melted under a covered lid for 3 minutes
