Cheesy Pasta Bake
Comfort food, the cheap and honest version. Pasta tossed with a quick tomato sauce, topped with cheese, baked until the top is bubbling and a little burnt at the edges. Make extra and reheat tomorrow. It's arguably better the second day.

Ingredients
- ·300 g penne or fusilli pasta
- ·1 × 400 g can canned tomatoes
- ·150 g, grated cheddar cheese
- ·3 cloves, minced garlic
- ·1, diced onion
- ·2 tbsp olive oil
- ·to taste salt
- ·to taste black pepper
Method
- 1.Heat the oven to 200 °C (400 °F). Bring a big pot of salted water to a boil.
- 2.Cook the pasta for 3 minutes UNDER package time. It'll finish in the oven.
- 3.Meanwhile, warm the oil in a saucepan. Cook the onion 6 minutes, add garlic for 30 seconds, then the tomatoes. Simmer 10 minutes. Season hard with salt and pepper.
- 4.Drain the pasta and toss with the sauce and half the cheese in a baking dish.
- 5.Top with the remaining cheese. Bake 15-18 minutes until the top is deeply golden and bubbling around the edges. Let it sit 5 minutes before serving.

- cheddar: any melting cheese. Mozzarella, gruyère, or a mix
- oven: make it on the stove and finish with cheese melted under a covered lid for 3 minutes
